How to brew black tea
Broken leaf infuses quickly, so a short steep in water just off the boil gives a bright, clean cup. Drink it black, with lemon, or with a splash of milk.
Measure
1 teaspoon (about 3 g) per cup of 180 ml.
Water just off the boil
Around 95°C. Boiling water scorches tea and pulls out harsh tannin.
Steep, then strain
3–5 minutes. Steep for less time if you like it lighter.
Serve
Black, with lemon, or with milk to taste.
What BOP means
BOP is Broken Orange Pekoe: smaller broken leaf that infuses quickly and gives a fuller cup than whole leaf. Whole-leaf grades like OP brew lighter and more floral.
Water, not just leaf
Boiling water scorches tea and pulls harsh tannin. Take it off the boil to around 95°C and time the steep.
Black or with milk
Steep for less time for a lighter cup. For a strong, milky chaya, the Premium Milk Tea Powder is built for it.
