How to use it
Raw honey keeps its enzymes, pollen and propolis — all of which heat destroys. Everything below is about not cooking it.

Keep it under 40°C
Stir into warm tea, milk or water — never boiling. Above 40°C the live enzymes break down.
A spoon in the morning
One spoonful in warm water, on an empty stomach, is the traditional Kerala use.
Baking
Swap 3/4 cup honey for every 1 cup of sugar, and drop the oven about 15°C.
If it crystallises
That is proof it was never heated. Stand the jar in warm water — do not microwave it.
Raw means unheated
Commercial honey is usually pasteurised and filtered so it stays clear and pourable on the shelf. That process strips the pollen and enzymes.
It will set solid
Glucose crystallises out over weeks. Runny honey that never sets has almost always been heated or cut with syrup.
Wildflower, not monofloral
Hives sit in forest clearings, so the flavour shifts with whatever is in bloom that season. Two jars will not taste identical.
Raw, Unprocessed — Pure Forest Honey from Adimali, Kerala

Why Raw Matters
When honey is heated above 40°C, live enzymes, pollen, and bioactive compounds break down. Ours is cold-extracted, preserving:
- Live enzymes (amylase, invertase) for digestion support
- Pollen — trace minerals, natural immune support
- Propolis — natural antimicrobial compounds
Crystallization is Natural
Raw honey crystallizes over weeks to months as glucose forms crystals. This is proof of purity — not spoilage. To liquify: warm gently in a water bath below 40°C.
How to Use
- Stir into tea, coffee, or warm milk
- Spread on toast or in yogurt
- One spoonful with warm water each morning
- Baking: use 3/4 cup honey per 1 cup sugar
