What Does "Grade" Actually Mean in Cardamom?
When you buy green cardamom online in India, you'll see labels like 8mm, 7mm, AGEB, Extra Bold, and Bold. These are size-based grading standards set by the Spices Board of India, and they matter for two reasons: aroma and cooking use.
The pod size tells you the maturity stage at harvest. Larger, fully matured pods have denser volatile oil content — which means stronger fragrance and longer shelf life once opened.
The Main Grades Explained
8mm — Premium Grade
The best grade available. Pods are a minimum of 8mm in width, fully rounded, dark green, and heavy for their size. If you've bought cardamom from a Kerala hill farm directly, you've likely had 8mm without knowing it.- Aroma: Highest intensity, floral-camphor-sweet
- Best for: Chai, biryanis, kheer, and any preparation where you crack the pod open
- Price: Highest among the three grades
7mm — Standard Grade
Pods are between 7mm and 8mm. Slightly younger at harvest but still from the same Idukki or Wayanad region farms. The aroma gap between 7mm and 8mm is noticeable in direct comparison but minor in daily use.- Aroma: Good, slightly lighter than 8mm
- Best for: Everyday chai, everyday rice dishes, spice blends
- Price: Mid-range
Below 7mm / Mixed Grade (Retail Bags)
Most cardamom sold in Indian supermarkets and standard online marketplaces is mixed-grade or sub-7mm. This isn't necessarily bad spice — it just means lower oil content, faster aroma loss after opening, and inconsistent pod sizes in the bag.AGEB — What Does the Code Mean?
AGEB stands for Alleppey Green Extra Bold. It's a trade specification, not just a grade — it includes both the size (Extra Bold = 7.5mm+) and the origin (Alleppey / Alappuzha district warehouse certification).
If you see AGEB on a label in India, it means the cardamom was certified through the Kerala State Warehousing Corporation's Alleppey hub. It's a trust indicator for B2B buyers.
For home buyers, 8mm from Idukki or Wayanad will often outperform AGEB in aroma because the freshness advantage from direct farm sourcing outweighs the warehouse certification.
How to Check Grade Before You Buy Online
You can't measure the pods before buying online, but here are proxies:
- Pod colour — Deep green (not pale or yellowed) signals proper harvest timing and good storage
- Weight — Premium grades feel heavier relative to volume. If a 50gm pack looks very full, the pods may be hollow or below grade
- Listed origin — Idukki, Wayanad, Thekkady, and Munnar are the high-altitude zones. Pods from below 800m elevation are lighter in oil content
- Seller transparency — Does the seller name the farm, the district, or the altitude? If not, they likely don't know
Which Grade Should You Buy?
| Use Case | Recommended Grade |
|---|---|
| Special occasions, guests, festivals | 8mm Premium |
| Daily chai, everyday cooking | 7mm or 8mm |
| Spice blends, masala powders | Any grade — oil is extracted anyway |
| Gifting | 8mm always |
Why Kerala Cardamom Specifically?
India grows cardamom in two regions: Kerala's high-range districts (Idukki, Wayanad) and Karnataka's Coorg. Kerala's high-altitude farms (800m–1600m) produce pods with higher cineole and linalool content — the two compounds responsible for cardamom's signature fragrance.
The Kerala advantage is elevation and rainfall, not just tradition. Higher altitude = slower maturation = denser volatile oils.
