Star anise grows in specific regions of India and Southeast Asia. Kerala's Idukki district has become known for producing premium star anise with exceptional aromatic compounds. The spice thrives in the region's specific climate and soil, developing deeper flavor compounds than industrial-grade star anise. Our star anise is hand-picked when fully mature (indicated by the deep brown color), sun-dried for 7-10 days, and hand-sorted to remove any broken or blemished pods.
Star anise's dominant flavor compound is anethole, the same compound in fennel and licorice, which creates the characteristic licorice-like flavor and sweet aroma. However, when star anise infuses into hot liquid or braised dishes, this anethole combines with other aromatic compounds to create something completely different—not candy-sweet, but warm, complex, and integral to Indian rice dishes.
Whole star anise pods maintain their essential oils for 18-24 months when stored properly in airtight containers away from heat and light. The integrity of the entire pod indicates the quality—broken or crumbled pods lose essential oils rapidly. A single whole pod has more flavor impact than five pods' worth of broken pieces.
