Why Good Cardamom Is Green, and What Bleaching Means
Compare pod size, aroma strength, and practical pack sizes before you buy.

Good cardamom is green because the husk still holds chlorophyll, the same pigment that colours leaves. That green survives only when fresh pods are dried gently and evenly, so a deep, even green is one of the easiest signs of careful drying. Pale, cream or white pods have usually been sun-dried, overheated or deliberately bleached.
This post covers what a pod's colour tells you, what bleached cardamom is, and how to spot pods that have been dyed.
Where does the green come from?
A fresh pod on the plant is bright green and full of water. The colour is chlorophyll, and chlorophyll breaks down with strong light, high heat and long, slow drying. As it goes, the pod turns yellow, then straw-coloured, then brown.
So the green in a dried pod is what's left of the fresh colour. The gentler and more even the drying, the more of it stays.
How does drying decide the colour?
Fresh pods have to lose most of their water before they can be stored, and the method matters a great deal.
| Drying method | Effect on colour | Effect on smell |
|---|---|---|
| Controlled dryer, moderate heat | Green is kept | Oils mostly kept |
| Dryer run too hot | More yellow and split pods | Some oils driven off |
| Sun drying | Pods fade and often split | Uneven, often weaker |
| Bleaching | Cream to white | Noticeably milder |
Curing guides for cardamom generally advise controlled, moderate heat, because higher temperatures raise the share of yellow and split pods. Sun drying is usually discouraged for the same reason, since it fades the pods.
Some processors also dip fresh pods briefly in a weak washing soda solution before drying, which helps hold the green. It's a processing step and it doesn't add colour.
Our post on cardamom harvesting and processing shows how pods get from the plant to the dryer.
What is bleached cardamom?
Bleached cardamom, often sold as white cardamom, is green cardamom treated to strip the colour on purpose. Traditional methods use sulphur fumes, and other methods use solutions such as potassium metabisulphite or hydrogen peroxide.
Why would anyone bleach it?
For looks and for particular markets. Some bakers, especially in parts of northern Europe, have preferred pale cardamom for pale baked goods. Bleaching also evens out pods that are patchy, so it's one way to sell pods that would fetch a low price as green.
The cost is flavour. Bleaching takes some of the smell with it, so cooks who want full cardamom smell choose green.
Is bleached cardamom unsafe?
It's mainly a quality and flavour question. If you're sensitive to sulphites, or a doctor has told you to avoid them, check with the seller before buying white cardamom.
Can cardamom be too green?
Yes, and it's worth a look. Whole cardamom shouldn't have added colour. Dyed pods tend to look unnaturally bright and uniform, sometimes almost emerald.
A simple home check:
- Put a few pods in a small glass of water.
- Leave them 15 to 20 minutes, stirring once.
- Rub one pod firmly on a white tissue.
- If the water turns green or the pod leaves a clear green smear, be suspicious and ask the seller.
Naturally dried cardamom shouldn't colour the water in that time. It's not a lab test, but it catches crude dyeing.
What colour should you look for when buying?
An even, natural green. Shades run from olive to bright, and every pack has some variation. A few paler or brownish pods are normal. Avoid a pack that's mostly pale, mottled or dull brown, or one that looks painted.
Colour is only one part of quality. Size, weight and fullness count too, which is why traders sort pods into grades. Our post on cardamom grades explains how, and the Kerala cardamom guide covers the rest.
How we dry ours
Our cardamom from Idukki is dried in a cardamom dryer, not in the sun, and packed whole with nothing added in a resealable pouch. The shade of green varies a little from lot to lot, as any farm crop does. You can see it in our Kerala Cardamom whole pods.
Frequently asked questions
Why is my cardamom turning pale in the jar?
Light is the usual reason. Chlorophyll fades when pods sit in a clear jar on a sunny shelf. Keep cardamom in an airtight container away from light and heat and it holds its colour and smell much longer.
Next time you open a pack, check the colour and then crush a pod and smell it. Together they tell you a lot.
