If you have grown up on Kerala food and now live in another Indian city, the fastest fix for food that "isn't the same" is usually the spices, not the recipe. Cardamom, pepper and cloves bought locally are often old and faint by the time they reach a shelf far from Kerala. Ordering from a Kerala grower and stocking up properly closes most of that gap.
Why the same recipe tastes different away from home
Cardamom, pepper and cloves lose their smell with time and heat, and stock that travels through several hands before it reaches a shop in Delhi or Bangalore has usually already lost a lot of it. The dish is not wrong. The spice is tired.
What to stock up on first
- Cardamom. The one most people notice first. Weak cardamom flattens chai, payasam and biryani.
- Black pepper. Fresh Kerala pepper has a bright, almost citrus edge that pre-ground pepper from a supermarket doesn't.
- Cloves with the round head still on and some oil in them.
- Cinnamon or cassia for biryani and stew.
- Filter coffee or a strong CTC tea if chayakada-style chai or kattan kappi is what you miss.
Kudampuli for fish curry is another one people ask us about, though we don't sell it ourselves.
Ordering to another Indian city
We deliver across India, usually in 4 to 5 working days, with free shipping above ₹649. We don't ship outside India, so if you're abroad, the practical options are carrying spices when you visit, or asking family who is travelling to bring some for you.
Order what you'll get through in two to three months rather than a single huge order. Whole spices in a smaller pack that turns over stay fresher than a large tin that sits half-used for a year.
Carrying spices when you travel within India or back to Kerala
- Buy whole, not ground. Whole cardamom, pepper and cloves survive travel and months of storage far better than powder.
- Keep them in the original sealed pouch, or a clearly labelled jar, rather than loose in a bag.
- If you're carrying a large amount for extended family, split it into a few smaller sealed packs so nothing spills if one opens.
Keeping spices fresh once they're far from a Kerala kitchen
- Airtight glass jars, away from the stove and the window.
- Split a big pack: a small jar for daily use, the rest sealed and out of the light.
- In a dry climate or with an air conditioner running most of the day, spices actually keep a bit longer than in humid Kerala weather. Don't refrigerate them either way.
A small starter kit
Cardamom, black pepper, cloves, cinnamon and a filter coffee or strong tea cover most of what a Kerala kitchen needs day to day: chai, biryani, meat curries, stew and payasam.
Our 3-in-1 spice combo (cardamom, pepper and cloves) is an easy way to start, and the starter trial pack is a smaller option if you want to try a few things first. If you have a question about delivery to your pin code, message us on WhatsApp at +91 88482 65849.
