Which Spices Go Into a Kerala Sadya?

2 min read

Answer-first guidance with a faster path to farm-origin Kerala products you can buy today.

Quick Summary

A Kerala sadya is light on heavy spices. The spices across sambar, rasam, avial and payasam, and where cardamom and pepper come in.

1 30 years of farming experience in Kerala
2 Farm-origin sourcing with stronger aroma retention
3 Small-batch packs designed for repeat kitchen use

People expect a feast of 20-plus dishes to be heavy with spice. A Kerala sadya isn't. Most dishes are built on coconut, curry leaves, mustard seeds and a few simple spices, and the whole-spice aromas people associate with Kerala biryani and meat curries barely appear. The one big exception is dessert.

The everyday spice base

Across most sadya dishes you'll find:

  • Mustard seeds, dried red chillies and curry leaves in coconut oil: the tempering for almost everything.
  • Turmeric for colour.
  • Green chillies for heat, often more than chilli powder.
  • Cumin, ground with coconut, in dishes like avial, olan and kootu curry.
  • Fenugreek and asafoetida in sambar and some pickles.

Dish by dish

Dish Spices used
Sambar Coriander, red chilli, fenugreek, asafoetida (often roasted with coconut in Kerala)
Rasam Black pepper, cumin, garlic
Avial Cumin, green chilli, ground with coconut
Olan Green chilli, coconut milk, very mild
Pachadi / kichadi Mustard (ground and tempered), green chilli
Inji puli / puli inji Ginger, green chilli, tamarind, jaggery
Pickles Chilli, mustard, fenugreek, asafoetida
Payasam / pradhaman Cardamom, dry ginger

Where cardamom comes in

In the payasams, you can't skip cardamom. Ada pradhaman, parippu pradhaman and palada all finish with ground cardamom, and the pradhamans often get dry ginger too. It's the last dish of the meal and the one whose smell lingers.

Where pepper comes in

Rasam is the main pepper dish, served near the end of the meal to settle the stomach. Some families also use crushed pepper in olan or erissery.

Why so light on whole spices?

Traditional sadya is vegetarian and was served at temples, homes and festivals. Heavy garam masala spices belong more to Kerala's meat dishes and biryanis, influenced by Malabar's trade history. The sadya is about vegetables, coconut and balance.

For the payasam course, fresh Idukki cardamom makes all the difference. For rasam, crush whole black pepper fresh. We've also written about how much cardamom to use in payasam.
