Cardamom Pods vs Powder: Which Should You Buy?

For most kitchens, whole cardamom pods are the better buy. They stay fragrant for months, you can see their quality before you use them, and grinding a few seeds takes under a minute. Ready cardamom powder makes sense only if you bake often and will finish a small pack within a few weeks.

Why do whole pods keep their smell longer?

Cardamom's smell comes from aromatic oils held inside the small black seeds. The green husk acts like a sealed wrapper around them.

Once the seeds are ground, those oils are spread across a huge surface and meet air straight away. They start fading within days. A jar of powder that has been open for a few weeks often smells faintly, while pods from the same batch still smell strong when you crack one.

What you can't see in a powder

With pods, you can judge what you're paying for. Good pods are green, plump and evenly sized, and the seeds inside are dark and sticky. Our guide to cardamom grades explains what the sizes mean.

With powder, all of that disappears. A powder may be made from smaller or lower grades, and some include ground husk, which has far less flavour than the seeds. Plenty of powders are fine. You just have to trust the seller more, because you can't check.

When does ready powder make sense?

  • You bake often and want a smooth texture with no husk specks.
  • You'll use up a small pack within about a month.
  • You need it for a one-off recipe and don't cook with cardamom otherwise.

If none of these apply, pods are the safer choice.

How to make fresh cardamom powder at home

  1. Split 10 to 15 pods with your fingers or the flat of a knife and tip out the seeds. Keep the husks for tea if you like.
  2. Put the seeds in the smallest mixie jar with a teaspoon of sugar. The sugar stops the oily seeds from sticking and helps them grind fine.
  3. Pulse in short bursts for 20 to 30 seconds in total, then sieve if you want it very smooth.
  4. Store in a small airtight jar and use within two to three weeks.

Do you always need to grind?

No. For chai, biryani and rice dishes, crush the pods lightly with the back of a spoon and drop them in whole. The husk splits and releases the seeds as they cook. Our chayakada chai recipe uses cardamom this way.

Grinding matters mainly for sweets, payasam and baking, where you don't want a pod in someone's mouth.

Where people go wrong

  • Buying a big jar of powder. Most of it goes flat before you finish it.
  • Grinding a month's worth at once. Grind what you need for the next week or two.
  • Keeping cardamom near the stove. Heat and steam fade it faster, whole or ground.
  • Judging by price per gram alone. Powder can look cheaper, but if half of it loses its smell, you end up using more.

Which should you buy?

If you cook Indian food regularly, buy whole pods in a size you'll finish within a few months, and grind small amounts as you go. Keep a little powder only if you bake often.
